There’s just something about fresh strawberry scones that feels like summer in every bite. These buttery homemade scones are packed with juicy strawberries and come together in just 20 minutes (start to finish!), making them perfect for a quick summer breakfast, sweet brunch treat, or afternoon coffee break on the patio. Easy Strawberry Scones

These strawberry scones came about because I wanted to use up two leftover ingredients from Mother’s Day brunch.

We had an abundance of strawberries and more whipped cream left over than I should eat by the bowlful. I added two more ingredients to that lovely start and this strawberry scones recipe was created!

These strawberry scones couldn’t be easier. It’s as easy as these blueberry scones. You just drop spoonfuls (big spoonfuls!) of dough onto your baking sheet; you don’t need to cut in butter, no rolling pin needed.

Woot, woot! You only need 4 ingredients for these strawberry scones:

  • Strawberries
  • Self-rising flour
  • Sugar
  • Whipping cream

How to Make Strawberry Scones

Mix the self-rising flour, sugar, and strawberries together in a bowl.  Pour the whipping cream into the dry ingredients. Stir gently, drop the scone batter onto baking sheets, and bake.

The prep work for this strawberry scones recipe takes about 5 minutes, and baking time is 12-15 minutes, so you could even make these scones on a weekday morning!

This fruit scones recipe only calls for a tiny bit of sugar – 1 tablespoon. The strawberry scones still have lots of flavor and are rich tasting and fluffy. If you like your scones on the sweeter side, feel free to use ¼ cup of sugar instead of 1 tablespoon.

A Note About the Strawberries for these No-Roll Scones:

I like to coarse chop the strawberries for this recipe.

I LOVE getting a big piece of strawberry when I bite into a scone. Most of the strawberries I simply cut in half.

It can be slightly trickier to tell that the scones are fully done when you keep your fruit pieces bigger. The other option is to chop up the berries smaller – say 4-6 pieces per berry.

That way makes sure all the pockets around the fruit cook evenly. Your choice!

A Note About the Easy Strawberry Scone Batter:

Because we are using a very hot oven to bake these strawberry scones, be careful of what you drop the batter onto.

Parchment paper is usually temperature rated to 450 F and we are baking hotter than that so if you are going to use parchment, use it with caution and check on the scones often.

I don’t find these strawberry scones to stick if you drop the batter right onto the baking tray.

I use a spatula and they came right off, but it will depend on the stickiness of your baking sheet. You can also use a small amount of cooking spray.

These strawberry scones taste like summer! This is a super easy strawberry scones recipe, with only 4 ingredients and takes 20 minutes to make from start to finish!

Cook Time 15 minutes
Total Time 20 minutes

Ingredients

  • 2 cups self-rising flour, (or 2 cups flour + 1 tbsp baking powder + 1/4 tsp salt)
  • 1 cup fresh strawberries, chopped
  • 1 ½ cups whipping cream
  • 1 tbsp granulated sugar, any kind, white sugar, coconut sugar, date sugar, erythritol, etc.

Instructions

  1. Preheat oven to 475 F.
  2. In a medium bowl, measure out 2 cups of self-rising flour.
  3. If you don’t have self-rising flour in your kitchen, use this: 2 cups flour + 1 tbsp baking powder + ¼ tsp salt.
  4. Add the strawberries and sugar to this mixture and stir together.
  5. Measure out 1 ½ cups whipping cream into a measuring cup and pour into the dry ingredients.
  6. Stir with a spoon until all mixed together.
  7. Scoop 8 large blobs of scone batter onto a baking sheet.
  8. Bake at 475F for 12-15 minutes until golden on top, and the middles are cooked.

    What is best way to reheat scones? I made them last night for ladies tea today. They are wrapped in paper towels in tin at room temp.

    1. Hi Jean! You can reheat scones in your oven or toaster oven. A low to moderate temperature of 325F or 350F for about 5-7 minutes to warm through works well. I hope you enjoy these strawberry scones at your ladies tea!
