Breakfast is my favorite meal of the day. Even on busy weekday mornings, I need breakfast. And with a kid, I need to make sure she eats well before she gets to school.
(She might have inherited the hangry gene from her mama.)
But both of us get bored of the same old bowl of cereal or toast for breakfast. These healthy easy recipes for breakfast are great to save when you want ideas of something tasty and quick.

1. Make-Ahead Healthy Easy Recipes for Breakfast: Overnight Oats

Prep these the night before and wake up to a ready-to-go breakfast.
Mix rolled oats with your choice of milk, yogurt, chia seeds, and toppings like fruit, nut butter, or honey.
Here’s how you make it (for one person):
- ½ cup rolled oats
- ½ cup milk (dairy or non-dairy)
- ¼ cup yogurt (plain or flavored)
- 1 tsp chia seeds
- fresh or frozen fruit (berries, banana slices, etc.)
- 1 tbsp nut butter (peanut, almond, etc.) (optional for extra protein)
- drizzle of honey (optional, for sweetness)
Healthy, easy, inexpensive, and endlessly customizable.
2. Greek Yogurt Parfait

Layer Greek yogurt with mango, or berries, granola, and a drizzle of honey or maple syrup.
This quick healthy meal is full of protein and feels way fancier than it actually is. It’s also very frugal.
3. Avocado Toast with Egg

Smash half an avocado on whole grain toast, sprinkle with salt, pepper, and chili flakes, then top with a fried or boiled egg.
You can even make the boiled eggs the night before, so morning prep is extra quick.

4. Smoothie Packs

Pre-pack smoothie ingredients (frozen fruit, spinach, protein powder, etc.) in freezer bags.
In the morning, dump into the blender with milk or water and go.

5. Banana Oat Pancakes

Blend 1 banana, 2 eggs, and ½ cup oats into a batter.
Cook like regular pancakes.
These are naturally sweet, gluten-free, and feel like a treat. Kids love them!
You can make a big batch of these on the weekend and refrigerate or freeze the banana pancakes. Pop them in the microwave for a quick, healthy breakfast.
