Ingredients

  • 3 cups whole wheat flour + 2 tablespoons
  • 1 ½ cups pitted chopped olives
  • 2 tsp instant yeast
  • 1 tsp sea salt
  • 1 ½ cups hot water + up to 1/4 cup more - you want the dough shaggy with no dry spots

Instructions

  1. Mix all the ingredients together, including the olives.

  2. Let rise for 2-12 hours in a bowl covered with saran.

  3. After the rising time is up, preheat your oven to 400 degrees F.

  4. Add in another couple of tablespoons of flour to bring the dough together (and sprinkle some on a baking sheet or in your loaf pan).

  5. Don’t knead it – remember this is no-knead olive bread!

  6. Bake for ~40 minutes at 400 degrees F.

  7. To know when the bread is done, it should sound hollow when you tap it.
