Peppermint Chocolate Cake

This peppermint chocolate cake is a rich chocolate cake with chocolate peppermint icing, decorated with candy canes.  It makes the perfect winter dessert!

Ingredients

Chocolate Cake:

  • 2 1/4 cups white flour
  • 1/2 cup + 2 tbsp cocoa powder
  • 1 1/2 cups + 2 tbsp granulated sugar
  • 1 1/2 cups water
  • 1/2 cup oil any liquid oil - I used melted coconut oil
  • 1 t sea salt
  • 1/2 tsp baking soda
  • optional: 4 candy canes crushed, for decorating

Chocolate Peppermint Icing:

  • 2 1/2 tbsp vegan butter or butter
  • 2 tbsp hot water + ~1 more tbsp
  • 2 1/2 cups icing sugar
  • 1/2 tsp peppermint extract
  • 2 tbsp cocoa powder

Instructions

Chocolate Cake

  1. Preheat oven to 350 degrees F.

  2. Mix flour, cocoa powder, sugar, sea salt, and baking soda together in a large bowl.  Measure water and oil into a measuring cup, pour into dry ingredients and stir.

  3. Pour into a 9x13 rectangle pan that has been sprayed with oil and bake for 22-26 minutes at 350 F. Let the chocolate cake cool completely before frosting.

Chocolate Peppermint Icing

  1. Mix the icing sugar, vegan butter or butter, peppermint extract, cocoa powder, and 2 tbsp hot water in a mixer on medium speed for about a minute until blended and creamy.  At this point you might want to add the additional 1 tbsp of water and blend it in.

  2. Frost the cooled chocolate cake, top with crushed candy canes (press them into the chocolate peppermint icing slightly) and cut into 48 squares for small portions/dessert platters, or 12 large squares.
